Ersons Group is opening up a new concept after succesfuly with their previous creation, The Holy Crab, The Holy Crab Shack and Hokkaido Ramen Santouka. Taking place at Wolter Mongonsidi, just beside the KFC, in Senopati area, this restaurant is inspired from Texas cooking method; “low ‘n slow” or known as cooking in low and stabilize temperature for several hours. According to chef Albert Wijaya, owner of Holy Smokes, “Our oven temperature is 121 degree celsius. Upon cooking, temperature would decrease to 90 degrees as to create a very tender yet still juicy meat”.
Holy Smokes try to serve Jakarta foodies with different concept of ordering where customer will be given a pager after ordering their menu from the cashier. Then, if the pager buzz, it means your food is ready for you to take. There will be no waiter to deliver the food for you. It’s more of a self-service system there. The main dishes range of price starts from IDR 88,000 to +/- IDR 280,000. Whilst, side dish or snack start from IDR 40,000.
Their signature dish is the Smokey Beef Brisket. Cook Low n’ Slow to deliver the crisp side yet juicy and tender inside. For side dish, I recommend to try their Onion Straw – deep-fried onion rings that cut and slice thin like a straw.
